Banana Bread Pancakes

Did you ever sing that song at summer camp? We did, and now I can't see a banana without hearing the shouts of 100 8-year-olds. What else do 8-year-olds like? Dessert for breakfast!

So do 41-year-olds. Sometimes. And so I invented Banana Bread Pancakes.

  • 3 smashed bananas
  • 2 T melted butter
  • 1 T lemon juice
  • 1 T sugar
  • 2 eggs
  • 3/4 cup Bob's Red Mill Gluten-free flour mix
  • 1/4 cup rolled oats
  • 1/2 t baking soda
  • 1/2 t salt
  • 1/2 t cinnamon
  • 1/4 t nutmeg
  • 1/4 t allspice (or ginger)
  • 1/4 cup chocolate chips (heh heh heh)
  • 1 cup of chopped walnuts

  1. Mix bananas, butter, lemon juice, sugar & eggs together in a small mixing bowl
  2. In a large bowl, blend together flour mix, oats, baking soda, salt, cinnamon, nutmeg, & allspice
  3. Using a rubber spatula, fold in the dry ingredients and the chocolate chips
  4. Let mix sit for 10 minutes. In the meantime, heat up your skillet on medium-low.
  5. Pour batter in several tablespoons at a time and then immediately sprinkle some of the walnuts onto the batter. When edges of pancake are cooked, flip the pancake & cook till done.
  6. Repeat until batter is all gone, keeping pancakes warm.

Eat. You don't even need syrup, because they taste like banana bread. But indulge if you must. I bet something with lots of brown sugar would taste good.

A fancy breakfast for someone special!
