Real Foods Challenge Day #2

Today was a pretty easy day to meet the challenge:  we have a lot of leftovers in the fridge, and they all need to be eaten.  And, since I knew we'd be doing the challenge this week, and since I knew I'd have leftovers, I made sure the meals I made last week were up to this week's restrictions.

Dependent clauses notwithstanding, this is what we ate yesterday:

Breakfast:  I'm out of yogurt, and I'm out of berries, so my go-to breakfast was out of the question.  Instead, I turned to one of my favorite snacks.


I love Granny Smith apples and almond butter.  The apples are in season in Washington, so they're plucked close by, and the almond butter is fresh-ground at the co-op (they have both peanut butter and almond butter machines).  Filling, since the almond butter has fat and protein.  Healthy too.

Lunch:  Shanti had last night's lasagne.  I heated up something a bit older in the fridge.

 

Last week I made butternut squash soup, and it really was on its last legs.  I had a bowl with two slices of the whole grain bread and a small glass of juice.  Again, very filling.  The soup uses leeks, squash, thyme, butter, and vegetable stock.  I make my own vegetable stock, so no worries about preservatives or unwanted anything.


Dinner:  I had the lasagne for dinner, but Shanti heated up some of the vegetarian chili I made last week.  Beans (from our garden!), tomatoes I had canned, spices, and two jalapeƱos -- there's nothing in this chili that's "not allowed."  Shanti shredded some cheese in the hopes that it might cut down on the spiciness (I'll not be using 2 jalapeƱos again).

Along with coffee and tea, Shanti had a beer with dinner, and I finished off the wine.
